Apricot Bars
The farmer isn’t crazy about fresh apricots, but Apricot Bars made with chunky, sweet
preserves are his absolute favorite.
Apricot Bars
Ingredients
1 cup butter flavored Crisco
1 1/3 cup dark brown sugar
1 ¼ cups self-rising flour
1 ¼ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
2 cups quick cook oats
2 eggs
1 tsp vanilla
2 Tbsp cream
16 oz apricot preserves
½ cup nut topping
Directions
1. Preheat oven to 350 degrees.
2. Grease a 9 x 13 casserole dish.
3. In a large bowl, cream together Crisco and sugar.
4. Add flours, soda and powder to bowl. Use an electric mixer to beat.
5. Stir in oats to create crumbles.
6. Set aside 1/3 of the crumbles in a small bowl.
7. Beat two eggs, vanilla and cream into original bowl of crumbles. Press dough evenly into prepared dish. Bake 15 minutes.
8. Remove casserole dish from oven, spread apricot preserves over crust. Sprinkle with remaining crumbly mixture. Top with nut topping. Bake an additional 20-25 minutes until crust is golden.
9. Allow bars to cool completely before cutting.
