Asian Pork Wraps
Dragon Beans are an heirloom variety. They are creamy yellow in color with paintbrush flecks of bright purple. The beans have a wide shell similar to a Roma Bean. The inside bean is large and flat like a Lima. Though the texture is identical to a standard green bean, the taste is totally distinct.
Asian Pork Wraps
with Dragon Dippers
Ingredients
2 cups cooked pork loin, shredded
2 cups spicy Asian salad greens, chopped
2 green onions, chopped
2 Thai chilies, chopped
1 tomato, chopped
8 oz Monterrey Jack cheese, shredded
½ cup mayo
4 large wraps
Dragon Beans
For dipping sauce:
1/2 cup mayo
¼ cup honey
¼ cup Dijon mustard
Crushed red pepper to taste
*Mix all ingredients, serve on side.
Directions
1. Combine first six ingredients in a large bowl.
2. Spread a thin layer of mayo on each wrap. Distribute filling among wraps and fold burrito style.
3. Blanch beans for 10 seconds. Follow with ice bath.
4. Serve with a side of dipping sauce.
