Avocado Egg Wraps
Ingredients
10 eggs, hard boiled and peeled
¼ cup mayo
¼ cup salsa
3 large avocados, diced
¼ cup green pepper, diced
4 green onions, chopped
Smokey paprika
Salt and pepper to taste
10 Tortillas
Shredded green leaf lettuce and sprouts for serving
Directions
1. Remove yokes from hard boiled eggs and chop whites.
2. In a large bowl combine mayo and salsa.
3. Add chopped egg whites, diced avocados, green pepper and onions to bowl, stir.
4. Season with paprika, salt and pepper to taste.
5. Cover and refrigerate at least one hour before serving.
6. Serve with fresh tortillas, shredded lettuce and sprouts for an extra crunch.
