Beef n’ Barley Soup

Ingredients
1 lb beef stew meat, tenderized
32 oz low sodium beef broth
2 cloves garlic, minced
½ tsp smoky paprika
½ tsp black pepper
1 tsp Worcestershire sauce
14 oz stewed tomatoes
1/8 cup green pepper, diced
1/8 cup yellow onion, diced
1 parsnip, diced
1 bunch radish, greens removed and diced
½ cup cold water
2 Tbsp cornstarch
½ cup uncooked barley

Directions
1. Place stew meat, broth. Garlic, paprika, pepper, Worcestershire sauce and stewed tomatoes in a crockpot. Turn to high setting for 2 hours.
2. Reduce heat to low. Add peppers, onions, parsnips and radish.
3. Whisk cornstarch and water in a small bowl. Pour into crock. You may add additional water if needed. Cover and cook an additional 2-4 hours at low setting.
4. Add barley to crock 1 hour prior to serving.
