Beet and Green Sauté
Don’t toss those tops!
Beet greens are edible. The greens actually contain more healthy carotenoids, flavonoid antioxidants, and vitamin A than the roots.
Beet and Green Sauté
Ingredients
1 bunch beets with greens
½ cup beef stock
Juice of 1 lemon
1 Tbsp butter
Salt and fresh milled pepper
Directions
1. Wash beets and greens. Trim stalks off greens, chop leaves and set aside. Slice beets to ¼ in thickness.
2. Place beets in a heavy saucepan. Add stock and lemon juice. Boil until beets are tender and juice is reduced.
3. Add butter and greens to saucepan, season with salt and pepper, sauté 1 minute to wilt greens. Serve immediately.
