Black Eyed Peas and Greens
Ingredients
12 oz dried black eyed peas
Ham hock
1 pkt Wiley's Beans & Peas Seasoning
2 cloves garlic, minced
14 oz low sodium chicken broth
Dash crushed cayenne
1 small yellow onion, chopped
1 bunch collard greens, stems removed and leaves chopped
Directions
1. Soak peas overnight. Drain water and rinse.
2. Place in crock with hock, seasoning and garlic. Cover with water. Cook on low until tender. Approximately 8-10 hours.
3. Drain, reserving half of the liquid.
*At this point you may store peas in fridge overnight at this point, and restart the crock the next morning or continue on with recipe.
4. Return peas to crock. Add chicken broth, cayenne, onion, collards to crock. Cover with water.
5. Cook on low 4-6 hours.
