Broccoli Salad
Ingredients
¾ cup mayo
1/2 cup cream
3 Tbsp white vinegar
¼ cup sugar
Dash salt
½ tsp coarse ground pepper
2 heads broccoli, cut into bite sized flowerets, washed and drained.
4 eggs, hardboiled and peeled
½ cup grape tomatoes
¼ cup red onion, diced
¼ cup sweet red pepper, diced
Crumbled bacon for garnish (optional)
Directions
1. In a small bowl, whisk together mayo, cream, vinegar, sugar, salt and pepper.
2. Remove egg yolk and chop whites.
3. In a large bowl mix broccoli, egg whites, tomatoes, red onion and pepper.
4. Pour dressing over vege blend. Stir to coat.
5. Cover and refrigerate at least 1 hour before serving.
6. Garnish with crumbled bacon before serving if desired.
Variation:
Honey Mustard Broccoli Salad

2 tsp Bragg Apple Cider vinegar
2 Tbsp spicy brown mustard
¼ cup honey
Dash salt
½ tsp coarse ground pepper

¼ cup sweet red pepper, diced
