Buckeye Brownie Cups
Ingredients
2 cup butter
1 (10 oz) bag semisweet chocolate chips
6 eggs
3 ½ cups sugar
3 Tbsp French Vanilla liquid coffee creamer
1 cup all-purpose flour
1 cup self-rising flour
10 oz peanut butter candy coating wafers
½ cup creamy peanut butter
Directions
1. Preheat oven to 375 degrees.
2. Melt butter in a large nonstick saucepan over low heat.
3. Add chocolate chips, stir smooth. Remove from heat and allow to cool 5 minutes.
4. Meanwhile, whisk together eggs, sugar and creamer. Pour cooled chocolate over top, and beat with an electric mixer.
5. Incorporate flours to create batter.
6. Line a muffin tray with parchment cups, fill each cup 2/3 full.
7. Bake 15-18 minutes. Brownie center will be set but not solid. Remove from oven and allow to cool.
8. Melt peanut butter and candy coating in a double broiler. The center of cooled brownies will have sunken. Spoon PB mixture in center of each brownie cupcake to fill. Coating will set when brownies are completely cool.

Mint Chocolate Brownies

1 (10oz) green colored vanilla mint candy coating wafers
