Cabbage Fritters
In case you were wondering, cabbage fritters are every bit as good as corn fritters.
Cabbage Fritters
Ingredients
1 1/2 cups green cabbage, shredded
1 1/2 cups red cabbage shredded
3 green onions, chopped
1 tsp sesame seeds
¼ tsp Cajun seasoning
2 eggs plus 2 egg yolks
½ cup self-rising flour
4 Tbsp oil for frying
Sour cream for serving
Directions
1. Preheat oven to 375 degrees. Line a large baking sheet with foil.
2. Combine cabbages and onion in a large bowl. Sprinkle with Cajun seasoning and sesame seeds.
3. Add eggs and egg yolks to bowl, stir to coat.
4. Add flour to create a sticky batter.
5. Heat oil in a cast iron pan to 325-350 degrees. Fry each side of fritter golden. Dab with paper towels to absorb extra oil before placing on foil lined baking sheet. Finish a crisp crust by baking in oven 10 minutes.
6. Serve hot with a side of sour cream.
