Caramelized Turnip Tacos

Although this recipe was inspired to be a breakfast taco, I like them with a side of lightly sautéed turnip greens for dinner.

Caramelized Turnip Tacos

Ingredients
1 Tbsp vegetable oil
3 pieces bacon
1 clove garlic, minced
¼ cup cane syrup
2 Tbsps water
3 large turnips, cut bite-sized
Salt to taste
4 eggs
2 Tbsp cream
Salt and pepper to taste
6 tortillas, warmed

 Directions
1. Heat oil in cast iron skillet over medium heat. Add bacon and garlic, fry crisp. Remove from skillet and crumble. Reserving oil/drippings in skillet.
2. Add cane syrup and water to skillet. Add turnips and a dash of salt. Stir to coat. Turn heat to low and simmer for 15-20 minutes until turnips are tender.
3. Meanwhile, whisk eggs and cream in a small bowl. Salt and pepper to taste. Scramble on stovetop.
4. Distribute egg in warm tortillas, top with turnip. Sprinkle with garlicky bacon crumbles.
