Carrot Zucchini Loaf

Carrot Zucchini Loaf with vanilla glaze

2 cups zucchini, grated
2 cups carrot, grated
2 eggs
2 cups sugar
1 cup vegetable oil
1 tsp baking powder
1 tsp baking soda
¾ tsp salt
1 tsp cinnamon
1 tsp ginger
¼ tsp allspice
3 cups flour

1. Preheat oven to 350 degrees. Grease 2 large loaf pans.
2. In a large bowl, combine grated veges, eggs, sugar and oil. Beat with an electric mixer. 
3. Add powder, soda, salt, cinnamon, ginger, allspice. Mix well.
4. Add flour to create batter.
5. Divide batter evenly between pans.
6. Bake 45-50 minutes, until center has set.

For vanilla glaze:

1 cup powder sugar
2 Tbsp vanilla coffee creamer

 Beat smooth with an electric mixer. Drizzle over cooled loaves.
