Chewy Spice Cookies


"Do you remember these?” I asked the farmer as I pulled a brown paper bag of gingersnaps off the grocer’s holiday clearance shelf. “They are way better stale- after the snap turns to chew!”

 This recipe is inspired by stale gingersnaps.


 Chewy Spice Cookies

 Ingredients
¾ cup butter, softened
1 cup sugar plus additional for rolling
1/4 cup cane syrup
1 large egg
½ tsp salt
1 tsp ginger
1 tsp cinnamon
¼ tsp allspice
4 drops pecan flavor
1 tsp baking soda
2 heaping cups all-purpose flour


Directions
1. Preheat oven to 350 degrees.
2. In a large bowl cream together butter and sugar.
3. Add cane syrup, egg, salt, spices, and pecan flavor to bowl. Beat with an electric mixer.
4. Add dry ingredients to create dough.
5. Shape dough into 1 inch balls, roll in sugar. Place on ungreased baking sheets.
6. Bake 10-12 minutes. Allow cookies to cool on baking sheet.
