Chicken Tortilla Soup

If Chicken Noodle Soup warms the soul, Chicken Tortilla Soup spices the spirit! 

 Chicken Tortilla Soup

3 cups chicken, cooked and shredded
1 (14 oz) can chicken broth
1 (14 oz) can diced tomatoes, Mexican style
1 (10 oz) can red enchilada sauce
½ tsp chili powder
3 cups chicken, cooked and shredded
3 tsp olive oil
2 garlic cloves, minced
2 green onions, chopped
1 zucchini, diced
1 yellow summer squash, diced
Cheesy tortilla chips for serving

1. Combine chicken, broth, tomatoes, enchilada sauce and chili powder in a large stockpot. 

2. Bring to boil then reduce heat to low.
3. Heat oil in a skillet. Add garlic and onions, sauté until fragrant, 1-2 minutes.
4. Add squashes and lightly sauté.
5. Spoon veges into stockpot. Simmer for 20 minutes before serving.
