Chicken Waldorf Salad

 Ingredients
¾ cup crème fraiche¹
½ cup mayo
1 tsp sugar
2 heaping cups chicken, cooked and cut
1 granny smith apple, chopped
1/3 cup dried cranberries
3 celery stalks, chopped
½ tsp coarse black pepper
Romaine lettuce for serving

 Directions
1. Combine crème fraiche, mayo and sugar in a large bowl. 
2. Add chicken, apple, cranberries, celery and pepper, stir to coat. 
3. Refrigerate 30 minutes before serving.
4. Serve on a bed of crisp romaine lettuce with bread or crackers.

 ¹To make crème fraiche, fill a quart sized jar with 1:4 ratio buttermilk to heavy cream. Leave it to thicken at room temperature for 24-48 hours.
