Chocolate Chip Scones
Ingredients
1 cup warm water
2 Tbsp plus ¼ cup sugar
2 tsp rapid rise active dry yeast
3 cups bread flour
1/2 teaspoon salt
1/8 cup vegetable oil
10 oz semi-sweet chocolate chips
Directions
1. Combine 2 Tbsp sugar, yeast and warm water in a small bowl. Allow to swell for 5 minutes.
2. Combine flour, ¼ cup sugar, and salt in a large bowl.
3. Pour yeast mixture into bowl. Add oil. Knead dough 2 minutes.
4. Place dough in large bowl. Cover with a sheet of greased saran wrap. Allow to rise 2-3 hours.
5. Punch dough down. Knead in chocolate chips.
6. Roll dough out to 1 inch thickness. Cut into triangles and place on a lightly greased baking sheet. Lightly cover a sheet of greased plastic wrap. Allow rest for 1 hour.
7. Preheat oven to 350 degrees. Bake scones for 15-20 minutes, until golden. Remove from oven, cool scones on a wire rack.
