Cinnamon Sugar Toast with Peach Compote

 For peach compote:
3 ripe peaches, peached and cut bite-sized
¼ cup brown sugar
1/8 cup water
1 tsp butter

Combine all ingredients in a heavy saucepan. Heat to boil then reduce to lowest setting for 30 minutes.

For toast:
8 thick slices bread, Dickie Bird Farm Wheat Country Loaf
3 Tbsp butter
2 Tbsp brown sugar
1 tsp cinnamon
1 cup heavy cream

1. Heat oven to 350 degrees.
2. Spread butter on bread.
3. Mix sugar and cinnamon in a small bowl. Sprinkle mixture on top of buttered bread. Toast in oven.
4. Meanwhile whip cream.
5. Spoon peaches on top of toast. Finish with fresh whipped cream.
