Corn Chive Salad

Ingredients
6 tbsp white wine vinegar
1 tsp kosher salt
½ tsp coarse ground black pepper
1/8 tsp crushed red pepper
¼ cup olive oil
¼ cup heavy cream
6 ears fresh corn, cleaned, husked and cut off cob
¼ cup sweet red pepper, diced
1/8 cup red onion, diced
1 cup grape tomatoes, halved
1/8 cup fresh chives, chopped
4 oz Monterey jack cheese, cubed
Crumbled bacon for garnish (optional)
Lettuce and cucumber for serving

Directions
1. In a small bowl, whisk together vinegar, salt, peppers, olive oil and cream.
2. In a large bowl mix corn, red pepper and onion, tomatoes, chives and cheese.
3. Pour dressing over vege mixture, stir to coat.
4. Refrigerate at least 1 hour and stir before serving.
