1 Tbsp butter
6 ears corn, cut off cob
2 cloves garlic
6 cups low sodium vegetable broth
2 tsp ham base seasoning
8 oz ham, diced
¼ cup green pepper, chopped
¼ cup sweet yellow onion, diced
2 cups cream
Fresh milled black pepper
1. Melt butter in a large skillet. Sauté corn soft.
2. Set one cup corn aside. Place the bulk of the corn in a blender or food processor with garlic and 1 cup vege broth. Puree.
3. In crockpot, combine puree, remaining broth, ham seasoning, ham and vegetables including last cup of corn. Cook on low 4-6 hours. Stir in cream one hour before serving.
