Crab and Crisp Pea Salad
Ingredients
2 Tbsp lime juice
2 Tbsp sugar
2 Tbsp vege oil
2 tsp vinegar
1 clove garlic minced
Pinch crushed red pepper
1 green onion, chopped
¼ cup red bell pepper, chopped
16 oz imitation or fresh crab meat
Fresh snap peas, washed and ends trimmed
1 carrot, thinly sliced into rounds
2 stalks celery, thinly sliced bite size
Salad greens for serving
Directions
1. Mix first eight ingredients in a large bowl.
2. Add crab, stir to coat. Cover and refrigerate for one hour, allowing the crab to soak up the vinaigrette.
3. Add pea pods, carrots and celery to bowl. Stir well.
4. Distribute over a bed of lettuce before serving.
