Crunchy Granola Bars

Ingredients
16 oz quick oats
10 oz honey roasted peanuts
7.2 oz bag pretzel crisps
1/3 cup flaxseed, ground
16 oz crunchy peanut butter
2/3 cup salted butter
1 ¼ cup brown sugar
2/3 cup honey
2 large eggs
1 tsp cinnamon
1 tsp vanilla extract

Directions
1. Preheat oven to 350 degrees.
2. Spread oats on a large baking sheet and toast for ten minutes.
3. Place peanuts in a blender or food processor and pulse to crumbs. Empty into large bowl.
4. Place pretzels in blender or food processor and pulse to crumbs and add to bowl.
5. Add toasted oats to bowl, mix well.
6. Combine butter and peanut butter in a saucepan and melt over low heat. Pour into a SEPARATE large bowl with brown sugar, honey, egg, cinnamon and vanilla. Beat with an electric mixer.
7. Combine wet and dry ingredients. Stir to coat.
8. Line two large baking sheets with foil and grease liberally. Distribute dough evenly between baking sheets and gently press into place.
9. Bake 20-25 minutes. Bars will be light golden brown. Remove from oven.
10. Allow to cool 5 minutes before cutting bars.
