Oatmeal Butterscotch Cookies
Ingredients
1 cup butter flavored Crisco
1 cup brown sugar
½ cup sugar
2 eggs
1 tsp vanilla
½ tsp salt
1 tsp baking soda
1 cup all purpose flour
1/2 cup self-rising flour
3 cups oats
2 cups butterscotch chips
1 cup walnuts, chopped
Directions
1. Preheat oven to 350 degrees.
2. Cream together shortening and sugars in a large bowl.
3. Beat in eggs and vanilla.
4. Incorporate salt, soda and flours to create dough.
5. Add oats.
6. Stir chopped walnuts and butterscotch chips into dough.
7. Drop by spoonful onto ungreased baking sheets.
8. Bake for 10-12 minutes.
9. Remove from oven and allow cookies to cool on the baking sheet.
Variation: Out of oats?

1 cup honey roasted peanuts, chopped

3. Beat in eggs and vanilla.
4. Incorporate salt, soda and flours to create dough.
5. Stir in chopped peanuts and butterscotch chips.
6. Drop by spoonful onto ungreased baking sheets.
7. Bake for 10-12 minutes.
