Chicken and Spinach Stuffed Winter Squash
Ingredients
2 medium sized winter squash (Hubbard pictured)
1 (10 oz) can cream of chicken and mushroom soup
¼ cup cream
1 cup chicken, cooked and chopped
1 cup fresh spinach, chopped
Salt
Fresh milled black pepper
Directions
1. Preheat oven to 350 degrees.
2. Use a knife to pierce squash, place on baking sheet, and bake 1-2 hours, until cooked thoroughly.
3. Cut lengthwise and scoop out seeds.
4. Heat soup, cream, and chicken on stovetop skillet. Stir smooth. Remove from heat and stir in chopped spinach. Season with salt and pepper. Spoon mixture into squash.
5. Return stuffed squashes to oven for 20 minutes.
6. Sprinkle with fresh milled black pepper before serving.
