Chicken Fried Steak
with peppered cream gravy

For peppered cream gravy:
Ingredients
1 Tbsp cornstarch
1 cup water
4 Tbsp butter
1 cup heavy cream
½ tsp coarse ground pepper
Salt

Directions
1. In a small bowl, whisk together cornstarch and water.
2. Melt butter in a skillet. Add cream and pepper.
3. Add cornstarch liquid. Whisk continuously as you bring gravy to boil. The gravy will thicken immediately. Remove from heat.
4. Add salt to taste.

For chicken fried steak:
Ingredients
4 cube steaks
Salt and pepper
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp cayenne pepper
2 cups self-rising flour
2 eggs, whisked light
Lard for frying

Directions
1. Season cube steaks with salt, pepper, garlic and onion powders and cayenne pepper. 

2. Drench in flour.
3. Pour whisked eggs into a shallow dish. Coat steaks. Wipe off excess egg.
4. Drench in flour a second time and set aside to rest for 20 minutes. Dust with a bit of flour just before frying.
5. Heat 1/4 inch lard in a heavy cast iron skillet to 350 degrees.
6. Fry each steak until golden brown. Remove from oil and set on paper towels to drain excess oil. 
7. Ladle peppered cream gravy over steaks before serving.
