Corn and Potato Soup

Ingredients
3 large baking potatoes, peeled and diced
2 (14 oz) cans low sodium chicken broth
1 packet Sazon ham flavor
2 cloves garlic, minced
½ cup cooked ham, diced
2 carrots, chopped
1/8 cup red onion, chopped
3 to 4 ears sweet corn, cut from cob
Salt and pepper
Crumbled bacon for garnish


Directions
1. Place potatoes in a large stockpot. Pour in broth and 3 cups water. Add ham flavoring. Bring to boil, reduce heat to low. Cook until potatoes are tender.
2. Use a potato masher to break down potatoes as they cook.
3. Grease a skillet. Sauté minced garlic, ham, carrots and onion tender.
4. Spoon skillet contents into stockpot.
5. Add corn. Season soup with salt and pepper. Simmer 15-20 minutes.

6. Garnish. Serve hot.
