Crispy Corn Fritters

Ingredients
2 cups sweet corn, cut off cob
1 small hot pepper, chopped
1 egg
2 Tbsp cream
½ tsp Cajun seasoning
¼ cup self-rising flour
1/8 cup yellow corn meal
Vegetable oil for frying


 Directions
1. Preheat oven to 350 degrees, and then turn off.
2. Slowly heat 1/8 cup vegetable oil in a cast iron skillet to medium heat.
3. In a large bowl, combine all ingredients. Stir well to create a thick batter.
4. Drop by large spoonful into hot oil. Fry each side brown. Keep fritters in warmed oven until serving.
