Crustless Zucchini Quiche

 Ingredients
4 pieces bacon
1 large zucchini, sliced
4 large mushrooms, sliced
4 eggs
2 Tbsp cream
Dash of salt and pepper
¼ cup parmesan cheese

Directions
1. Cut bacon in 1 in pieces, fry crisp. Add mushrooms and cook tender. Drain.
2. In a small bowl, whisk together eggs, cream, salt and pepper.
3. Preheat oven to 375 degrees.
4. Grease a round cake pan. Layer zucchini on bottom of pan. Distribute mushrooms and bacon evenly over zucchini. Pour egg mixture over top.
5. Bake for 20 minutes. 
6. Sprinkle with cheese and bake an additional 15-20 minutes, until top is golden and cheese melted.
