Egg and Applewood Bacon Roll Ups

Ingredients
5 eggs
¼ cup heavy cream
Dash salt
Butter
¼ cup shredded sharp cheddar
4 slices Applewood bacon, fried crisp
Coarse ground black pepper

Directions
1. In a large bowl, whisk together eggs, cream and salt.
2. Preheat a nonstick skillet to medium. Melt a small amount of butter in skillet. Pour a thin layer of egg mixture into skillet, cook until set.
3. Remove egg from skillet and set aside. Cook additional thin omelets, keeping skillet lubricated with butter between batches to prevent sticking.
4. Preheat oven broiler. Grease a baking sheet.
5. Carefully roll a piece of bacon in each omelet. Place on baking sheet. Cover with cheese.

6. Broil until cheese bubbles.
7. Remove from oven, sprinkle with pepper. Serve piping hot.
