Egg and Avocado Scramble
Ingredients
2 tsp olive oil
¼ cup green pepper, chopped
¼ cup red pepper, chopped
¼ cup green onion, chopped
4 eggs
1 cup pinto beans
1 cup Tortilla chips, broken
1 cup jalapeno jack cheese, shredded
1 avocado, chopped
Sour cream, lettuce and tomato for serving.
Directions
1. Heat olive oil in a non-stick skillet. Lightly sauté onions, green and red peppers.
2. Whisk eggs in a medium bowl. Pour over veges and cook until set.
3. Add beans to skillet and scramble.
4. Heat oven broiler. Lightly grease a baking sheet.
5. Make a layer of crushed chips. Spoon scrambled eggs on top and finish with cheese.
6. Place under broiler until cheese is melted, hot and bubbly. Top with avocado.
7. Serve with sour cream and fresh fixings.
