Egg on Toast with Tomato Compote

Ingredients
4 eggs
4 slices mild cheese
4 thick slices French or Italian bread
1 tbsp olive oil
1 tsp red wine vinegar
2 cups cherry tomatoes
2 large cloves garlic, minced
2 cayenne peppers
1 sweet yellow onion, sliced thin

Directions
1. Preheat oven broiler.
2. Spread tomatoes, garlic, peppers and onion on a baking sheet. Drizzle with oil and vinegar. Season with salt and pepper.
3. Broil until tomatoes burst and skins have blackened, 5-7 minutes.
4. Remove from oven. Stir well.
5. Place slices of bread on a large baking sheet, top with cheese, cook under broiler until hot and bubbly.
6. Meanwhile, fry eggs sunny side up.
7. Assemble eggs on cheese toast, spoon compote on top.
