Egg Salad Slaw

For dressing:
½ cup mayo
1 Tbsp spicy brown mustard
¼ cup apple cider vinegar
¼ cup vegetable oil
1 Tbsp sugar
Black pepper to taste

Whisk all ingredients together in a small bowl until sugar is completely dissolved.

For slaw:

½ green cabbage, shredded
½ red cabbage, shredded
2 carrots, shredded
3 green onions, chopped
6 eggs, hardboiled, peeled and chopped
¼ cup sweet orange pepper, sliced thin

1. Place cabbages, carrots and onions in a large bowl.
2. Pour dressing over cabbage mix, stir to coat.
3. Divide slaw on plates. Sprinkle with chopped eggs. Top with orange peppers.
