Eggnog Cheesecake

For crust:
9 oz cinnamon graham crackers
2 Tbsp sugar
5 Tbsp butter, melted

1. Preheat oven to 350 degrees.
2. Place grahams in a food processor, process to crumbs.
3. Add sugar and butter, mix well.
4. Press mixture into the bottom of a 9 inch springboard pan.
5. Bake 10 minutes. Remove from oven.

For cheesecake filling:

3 (8oz) bricks cream cheese, room temp
1 cup sugar
3 Tbsp flour
½ cup eggnog
2 Tbsp rum
2 eggs

1. Preheat oven to 400 degrees.
2. Using an electric mixer, beat together cream cheese, sugar, flour, eggnog and rum. Whisk in eggs. Stir batter smooth.
3. Pour mixture into prepared crust.
4. Bake 10 minutes. Reduce heat to 250 and bake an additional 45 minutes until center has set. Cool completely before removing from pan.
