Eggs on Cabbage
with peppered cream gravy

For peppered cream gravy:
1 Tbsp cornstarch
1 cup water
4 Tbsp butter
1 cup heavy cream
½ tsp coarse ground pepper

1. In a small bowl, whisk together cornstarch and water.
2. Melt butter in a skillet. Add cream and pepper.
3. Add cornstarch liquid. Whisk continuously as you bring gravy to boil. The gravy will thicken immediately. Remove from heat.
4. Add salt to taste.

3 eggs
Salt and pepper
3 cups cabbage, thinly shredded
3 slices bacon
1 Tbsp butter

1. Melt butter in a cast iron skillet
2. Cut bacon into ½ in pieces and fry crisp
3. Add cabbage to skillet, sprinkle with pepper and sauté 1 minute
4. Remove cabbage from skillet, cover to keep warm.
5. Break eggs into skillet, sprinkle with salt and fry sunny side up.
6. Assemble plates: cabbage, topped with eggs, spoon gravy over top.
