End of the Season Salad

At Dickie Bird Farm, we harvest broccoli and green onions in spring and a second crop in fall. Whisk together this simple dressing, toss in spinach and the last of the cherry tomatoes, and enjoy this:

End of the Season Salad

Ingredients
1/2 cup mayo
1/2 cup cream
3 Tbsp white vinegar
¼ cup sugar
Dash salt
½ tsp coarse ground pepper
3 heads broccoli, cut into bite sized flowerets, washed and drained.
1 bunch spinach, chopped
1 cup cherry tomatoes, halved
2 green onions, chopped

Directions
1. In a large bowl, whisk together mayo, cream, vinegar, sugar, salt and pepper.
2. Add broccoli, spinach, tomatoes and onions to bowl. Stir to coat.
3. Cover and refrigerate 30 minutes before serving.
