Farmer’s Eggs

Farmer’s cheese is a soft cheese that doesn’t require aging. I bought it from the Amish market until I learned to make it myself, with fresh milk, vinegar, and a pinch of salt.
Farmer’s cheese adds a terrific tang to scrambled eggs.

Farmer’s Eggs

Ingredients
1 Tbp butter
6 eggs
3 Tbsp farmer’s cheese
Fresh milled black pepper

Directions
1. Grease a skillet with butter, heat to low.
2. Whisk together eggs and cheese until blended.
3. Pour into skillet.
4. Mill pepper over eggs and serve hot.
