First Harvest Stuffed Squash
Ingredients
1 large zucchini
1 tsp olive oil
8 oz ham, chopped
1 small roma tomato, chopped
3 green onions, chopped
1/3 cup fresh shelled peas
2 Tbsp water
Dash Creole seasoning
½ cup Colby jack cheese, shredded
Directions
1. Preheat oven to 350 degrees. Grease a baking sheet with olive oil.
2. Cut zucchini in half, scoop out seeds boat-style. Set cut side down on baking sheet. Bake 20 minutes.
3. Heat olive oil in a skillet. Brown chopped ham. Add roma tomato, green onion, peas, water. Sprinkle with creole seasoning. Sauté until peas are tender and liquid is reduced. Drain any remaining liquid.
5. Remove zucchini from oven. Stuff with filling, top with cheese and finish under broiler until cheese is hot and bubbly.
