First Harvest Stuffed Squash

Ingredients
1 large zucchini
1 tsp olive oil
8 oz ham, chopped
1 small roma tomato, chopped
3 green onions, chopped
1/3 cup fresh shelled peas
2 Tbsp water
Dash Creole seasoning
½ cup Colby jack cheese, shredded

Directions
1. Preheat oven to 350 degrees. Grease a baking sheet with olive oil.
2. Cut zucchini in half, scoop out seeds boat-style. Set cut side down on baking sheet. Bake 20 minutes.
3. Heat olive oil in a skillet. Brown chopped ham. Add roma tomato, green onion, peas, water. Sprinkle with creole seasoning. Sauté until peas are tender and liquid is reduced. D
rain any remaining liquid.
5. Remove zucchini from oven. Stuff with filling, top with cheese and finish under broiler until cheese is hot and bubbly.
