Vegetable Frittata

Ingredients
3 mushrooms, cleaned and sliced
3 green onions, chopped
1 Roma tomato, diced
1 clove garlic, minced
Pinch crushed red pepper
5 eggs
3 Tbsp cream
Salt and pepper
1/4 cup ham, diced
¼ cup sharp shredded cheese.

Directions
1. Grease a small nonstick metal pan¹. Sauté mushrooms, onions and tomatoes with garlic and red peppers over low heat.
2. In a large bowl, whisk eggs and cream. Season with salt and peppers. Pour mixture over vegetables.
3. Sprinkle ham on eggs and cook on stove top without stirring until center has set (8-10 minutes).
4. Heat oven broiler.
5. Loosen the frittata with a spatula and then use a plate to flip the frittata in the pan. 
6. Sprinkle flipped frittata with cheese and place pan under broiler until cheese is melted and bubbly.

¹use a pan with a metal handle.
