Fried Potato Puff

Make fresh or use leftover Potato Puff.


Fried Potato Puff

Ingredients
3 cups mashed potatoes
¼ cup cream
1 cup cheddar cheese
1 egg plus one egg yolk
2 green onions, chopped
vegetable oil for frying

Directions
1. In a large bowl stir together potatoes, cream, cheese, onions, egg and egg yolk. 
2. Grease a small springboard pan. Pour potato mixture into pan.
3. Bake for 35-40 minutes, until puffy and golden brown.
4. Remove from oven and cool completely in refrigerator.
5. Preheat a cast iron skillet. Grease well. Cut puff into wedges and fry golden brown.
