Grecian Green Beans
Ingredients
1 pound fresh green beans, washed and cut in bite size pieces
1 cucumber, chopped
1 cup cherry tomatoes, halved
2 green onions, chopped
1/4 cup Greek salad dressing
¼ cup Greek yogurt
Salad greens for serving
Directions
1. Bring a stockpot of salted water to boil. Blanch beans. Submerge in ice bath. Drain.
2. Place beans, cucumber, cherry tomatoes and green onions in a large bowl.
3. In a small bowl, whisk together Greek dressing and yogurt.
4. Pour mixture over veges. Toss to coat.
5. Chill at least 30 minutes before serving. Serve on a bed of fresh salad greens.
