Green Egg Salad

10 eggs, hardboiled
2 avocados
½ cup red wine vinegar
2 tsp spicy brown mustard
¼ cup olive oil
3 tsp sugar

¼ tsp onion powder
Fresh milled black pepper

Crackers for serving

1. In a large bowl, whisk together red wine vinegar, olive oil, mustard, sugar, and onion powder. Salt to taste.
2. Peel avocados, remove seed and add to bowl. Beat smooth.
3. Peel eggs, discard shells and yokes. Chop whites and stir in avocado mixture. Refrigerate at least 30 minutes before serving.
4. Sprinkle with black pepper and serve with crackers.
