Homemade Egg Noodles

Ingredients
8 eggs total: 6 yolks, 2 eggs
4 cups flour
3 tsp salt
1 cup water

Directions
1. Mix flour and salt in a large bowl. Prepare a well at center.
2. In another large bowl, whisk together eggs, egg yolks and water.
3. Knead dough until elastic, 7-10 minutes.
4. Cover dough and rest 30 minutes.
5. Divide dough into workable portions.
6. On a lightly floured surface, roll dough as thin as possible. 
7. Cut in long strips. Drape noodles over a hanger, chair back or cupboard door to keep from sticking. Leave noodles hanging 1 hour.

8. Bring a stockpot of salted water to a boil. Boil noodles tender. Drain.
9. Serve with favorite sauce, sour cream or butter.
