Italian Fried Eggs in Flat Bread
Ingredients
1 Tbsp olive oil
1 clove garlic, minced
3 Tsp white wine vinegar
¼ cup marinara
3 mushrooms, sliced
¼ cup sweet yellow onion, sliced
½ cup red pepper, sliced
½ cup yellow pepper, sliced
½ cup orange pepper, sliced
6 eggs
Salt and pepper
2 handfuls fresh spinach
¼ cup Romano cheese, shredded
Flat bread
Directions
1. Pour 1 Tbsp olive oil into a skillet. Sauté garlic over medium heat until fragrant.
2. Add wine vinegar, marinara, mushrooms, onion and peppers to skillet, simmer 10 minutes.
3. Fry eggs sunny side up, season with salt and pepper.
4. Assemble: flat bread, spinach, warm vegetables. Sprinkle with Romano cheese. Top with fried egg.
