Kale, White Bean and Sausage Soup


Kale is rich in Vitamin A, C and K. White beans are an excellent source of Omega 3 and 6. Together they make this soup a delicious way to stay healthy and warm through the cold months of winter.

 
Kale, White Bean and Sausage Soup

Ingredients
8 oz white beans, soaked overnight then rinsed
2 (14 oz) cans chicken broth
2 cups water
2 garlic cloves, minced
Black pepper to taste
Crushed red pepper to taste
½ tsp onion powder
1 lb smoked polish kielbasa, sliced and diced
6 mushrooms, chopped
2 carrots, chopped
1 bunch kale, stems removed and chopped.

Directions
1. Place beans, broth, water, garlic, onion powder, and black and red peppers in crock pot on high for 4 hours.
2. Add diced kielbasa and carrots, mushrooms to crock. Turn to low heat setting and cook an additional 2-4 hours.
3. Stir kale into crock about 30 minutes before serving.
4. Serve with fresh bread.
