Italian Salad Sandwiches

For dressing:
3/4 cup red wine vinegar
1/2 cups olive oil
¼ cup water
2 tsp spicy mustard
1/2 teaspoon sugar
1/4 teaspoon black pepper
¼ tsp crushed red pepper
½ tsp Italian seasoning
Dash salt
Pinch minced garlic

Combine all ingredients in a jar with a tight lid. Shake vigorously for 1 minute.

For Italian salad:
4 eggs, hardboiled, peeled and chopped
½ cup pepperoni, chopped
1 zucchini, chopped
¼ cup red pepper, chopped
¼ cup yellow or green pepper, chopped
5 mushrooms, chopped
3 green onions, chopped
2 carrots, chopped
1 bunch fresh spinach, chopped

1. In a large bowl, combine eggs, pepperoni and all vegetables.
2. Pour dressing into bowl. Toss to coat.
3. Allow salad to marinate at least one hour in refrigerator before serving.
4. Serve with flatbread.
