Jalapeno Hush Puppies

I had never heard of hush puppies before I moved to South Texas. I also thought cornbread came from a Jiffy box. Fortunately Texas taught me right. 

Jalapeno Hush Puppies


Ingredients
1 cup yellow cornmeal
1 cup self-rising flour
1 tsp sugar
½ tsp salt
1/8 cup sweet yellow onion, chopped
1/8 cup green or jalapeno pepper, chopped
1 egg
1 cup buttermilk
Oil for frying

Directions
1. Heat fry oil in a cast iron skillet to 350 degrees.
2. Preheat oven to 375 degrees.
3. In a large bowl, combine cornmeal, flour, sugar, salt, chopped onion and pepper.
4. Add egg and buttermilk, stir to form thick batter.
5. Drop batter by spoonful into skillet. Using a metal tongs, turn puppies as sides brown.
6. When all sides have browned, remove hush puppies from oil and drain on paper towels. Continue to fry in small batches.
7. Finish pups by baking in oven for 15 minutes. Baking ensures the pup’s inside is cooked and outside is crisp.
