Marinated Vegetable Salad
Ingredients
1/2 cup red wine vinegar
1/4 cups olive oil
1/2 teaspoon salt
2 teaspoon sugar
1/4 teaspoon black pepper
1 tsp Dijon mustard
1 clove garlic, minced
Fresh basil and oregano, snipped
5 mushrooms, chopped
1/8 cup red onion, chopped
1/2 cup fresh white beans, blanched¹
1 zucchini, chopped
1 summer squash, chopped
2 carrots, chopped
1 handful cherry tomatoes, halved
2 banana peppers, chopped
Directions
1. Whisk together red wine vinegar, olive oil, salt, sugar, black pepper, Dijon mustard, garlic and fresh herbs.
2. In a large bowl combine remaining ingredients.
3. Pour vinaigrette over veges, stir to coat. Cover and marinade in refrigerator at least 2 hours before serving.
¹If you must, sub fresh shelled white beans with canned.
