Mexican Potato Breakfast

Ingredients
2 potatoes, cut bite size
2 tsp oil
8 oz smoked sausage kielbasa, diced
1 green bell pepper, chopped
1 yellow onion, chopped
½ cup sharp cheese, shredded
½ cup tortilla chip crumbles
4 eggs
Enchilada sauce

Directions
1. Preheat oven to 400 degrees.
2. Toss potato chunks with oil and scatter on a greased baking sheet. Bake 10-12 minutes.
3. Sprinkle sausage, pepper and onion to baking sheet. Return to oven an additional 10-12 minutes.
4. Heat oven broiler. Sprinkle potato mixture with cheese and chips. Broil until cheese is melted and chips are browned.
5. Meanwhile, fry eggs sunny side up.
6. Drizzle with enchilada sauce before serving.
