Mini Crustless Quiches
Ingredients
6 pieces bacon, cooked and crumbled
8 eggs
1/2 cup cream
4 green onion, chopped
Salt and pepper
1/2 cup sharp cheddar cheese, shredded
Directions
1. Preheat oven to 375 degrees.
2. Grease 12 muffin tin. Sprinkle half of crumbled bacon into bottom of each cup.
3. In a large bowl, whisk together eggs, cream, green onions and season salt and pepper.
4. Distribute egg mix evenly among cups. Top with remaining bacon crumbles.
5. Bake for 12 minutes, until eggs have set.
6. Sprinkle with cheddar cheese and finish under oven broiler.
7. Allow 5 minutes to cool. Run a butter knife around each quiche to loosen. Pop out of pan.
