Pea and Pickle Salad
Ingredients
¼ cup apple cider vinegar
¼ cup white vinegar
½ cup sugar
¼ cup olive oil
¼ tsp sea salt
½ tsp celery seed
4 pickle cucumbers, sliced ¼ inch thickness
½ cup fresh peas
3 green onions, chopped
Lettuce, chopped
Directions
1. In a large bowl, whisk together vinegars, oil, sugar, salt and seed.
2. Add cucumbers, peas and onions to bowl, toss to coat. Cover and marinade at least 2 hours in refrigerator.
3. Spoon marinated pickles n’ pea on beds of fresh lettuce before serving.
