Peach Ricotta Pancakes
Ingredients
4 peaches, very ripe
2 Tbsp sugar and 1 Tbsp sugar divided
½ cup ricotta cheese
1 ½ cups all-purpose flour
½ tsp baking powder
Dash salt
2 cups vanilla almond milk
2 eggs
3 Tbsp butter, melted plus additional butter to grease skillet.
Directions
1. In a large bowl, whisk together milk, eggs, 1 Tbsp sugar, dash salt and melted butter.
2. Add flour and baking powder to bowl. Whisk into smooth batter.
3. Preheat a skillet, grease with butter. Cook pancake until center is set, flip and cook other side. Repeat until all cakes are cooked.
4. Peel peaches with a potato peeler or knife. Remove pit and mash in a small bowl. Stir in 2 Tbsp sugar.
5. Right before serving, spread ricotta on each pancake. Form layers. Pour peach mixture over top.
