Pecan Sandies
Ingredients
1 cup butter flavored Crisco
1 ½ cups sugar plus ½ cup separated
2 eggs
1 tsp butter extract
1 ¼ all purpose flour
1 ¼ self rising flour
1 tsp baking powder
¼ tsp salt
1 ¼ all purpose flour
8 oz glazed pecans, chopped
Directions
1. Preheat oven to 350 degrees.
2. In a large bowl, cream together Crisco and 1 ½ cups sugar.
3. Add eggs, butter extract, baking powder and salt. Mix thoroughly.
4. Incorporate flour to form dough.
5. Stir in chopped pecans.
6. Roll dough into small balls.
7. Place remaining ½ cup sugar in shallow bowl, roll each dough ball in sugar then place on ungreased baking sheets.
8. Bake 10-12 minutes.
9. Remove from oven. Cool completely.
